Gluten Free Chocolate Chip Cookies

Ingredients

  • 2 cups almond flour (blanched)
  • 1/4 cup flaxseeds
  • 1/2 tsp baking powder
  • 2/4 cup coconut oil
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips (51% cacao)
 
TIP: After you’ve tried out this recipe and it becomes a favourite, you can double the recipe. It is a time saver to freeze half of the baked batch (after it has cooled) and take it out for another week.

Baking Steps

  1. Preheat oven to 350 Degrees Fahrenheit.
  2. Mix all of the dry ingredients together (almond flour, baking powder, flaxseeds) in a large bowl, excluding chocolate chips.
  3. Next add in the coconut oil, vanilla extract and maple syrup all at once.
  4. Then stir together, until mixture is well blended.
  5. Lastly, add in the chocolate chips and mix to make sure the chocolate chips are evenly spreadout in mixture as much as possible.
  6. With a spoon, add the amount of mixture that fits into the palm of your hand.
  7. Roll the mixture into a ball.
  8. Next, flatten the ball with your hands and shape into a cookie.
  9. Place cookies on a baking sheet lined with parchement paper.
  10.  Bake in oven for 12-15 minutes (until bottom of cookie starts to slightly brown). NOTE: 12 minutes is a personal preference.
  11. Let the cookies sit for about 10 minutes so they aren’t overly soft and fall apart when picking them up.

Almond flour is high in Vitamin E, which is a fat-soluble vitamin with antioxidant properties. The antioxidant properties help fight harmful free radicals that can negitively impact our health.

Flaxseeds – is high in Omega 3 fatty acids, which helps reduce inflammation and positively influence the diversity of your friendly gut bugs.

Coconut oil– has antimicrobial properties, meaning that it can kill disease causing (unfriendly) gut bugs. 

Maple syrup – is high in manganese, which supports healthy bones. Maple syrup also has antioxidant properties. However, it is important to note that it should be consumed in limited amounts as it is still very high in sugar. With that being said, maple syrup is a better alternative to processed sugar.
